Things seem to be back on track again in our house; it’s amazing how things can fall apart when you are busy doing fun things all week, instead of cleaning. After a much needed regular week, things are back to normal.
Last week, my meal plan included a Rachael Ray recipe (LOVE her recipes, can’t stand her, lol) for crispy orange beef. I really recommend you try this recipe, it was absolutely amazing! Any time I do a stir fry with beef, I am going to coat the beef in corn starch! It is so crispy and tender, it gives it a crunchy fried chicken type coating. As Earache annoyingly would say; YUM-O!
Here is what we are eating this week:
Monday – grilled cheese and corn on the cob (My son requested this for dinner!)
Tuesday – cheese ravioli and garden salad
Wednesday – pancakes with fresh strawberries (another toddler request, and who can turn it down when its super yummy and easy)
Thursday – burgers
Friday – veggie stir fry over rice, with red peppers broccoli and mushrooms.
While making my grocery list this morning, I asked my son if he wanted to buy carrots, since he devoured the ones we pulled from the garden last week. His response to my question: “Mommy, you don’t buy carrots! You grow them in the backyard!” Love that my kid knows where food comes from :) Hope everyone has a great week. Happy Meal Planning!
