I’ve got a super busy day today, so I’m keeping this short!
Here is what we are eating this week:
Monday – Ham with roasted sweet potatoes and garden salad
Tuesday – spaghetti
Wednesday – mini chicken meat loaves (adapted from this recipe) with roasted cauliflower and garden salad
Thursday – Mexican loaded sweet potatoes with chicken and blackbean topping and garden salad
Friday – Sesame ginger salmon (yes, again, it was delicious!) with veggie fried rice
